Ingredients
- 24 oz lean ground beef
- Taco seasoning
- ¼ cup red enchilada sauce
- 1 cup fat-free shredded cheddar
- ½ cup white rice
- 1 cup chicken bone broth

- Low calorie tortillas
- 2 tbsp nacho cheese
- Nonfat Greek yogurt or light sour cream
Instructions
- Cook beef with seasoning and mix in enchilada sauce and cheese.
- Cook rice in broth. Add lime and cilantro.
- Layer tortillas with nacho cheese, rice, beef, yogurt. Roll tightly.
- Toast in a skillet until golden. Serve warm.

Ingredients
- Butter
- Onions (chopped)
- Tomato paste
- Garlic and ginger puree
- Butter chicken seasoning blend
- Fire roasted tomatoes
- Diced chicken breast
- Fat free plain yogurt
Instructions
- Sauté butter and onions until caramelized.
- Add tomato paste, garlic, ginger, spices, and roasted tomatoes. Blend until smooth.
- Add chicken to slow cooker, pour in sauce, and cook according to settings.
- Stir in more butter and yogurt, let sit 10–15 mins. Serve.

Creamy Cajun Chicken and Rice (High Protein Meal Prep)
Ingredients
- 1¾ lbs (800g) chicken breast, cut into halves
- 3 tbsp cajun seasoning, divided
- 2 tsp olive oil
- 2 tbsp grass-fed butter, divided
- 1 medium red onion, chopped
- 4–5 cloves garlic, chopped
- 2 cups cooked rice
- ¼ cup fresh parsley, chopped
- 1 cup (250ml) milk
- 5 oz (150g) light cream cheese
- ½ cup (40g) grated parmesan
Instructions
- Coat chicken with 1½ tbsp cajun seasoning and olive oil. Sear in 1 tbsp butter over medium-high heat until crispy. Set aside.
- In the same pan, sauté onion and garlic for 5 minutes. Add ½ tbsp cajun seasoning and mix well.
- Add cooked rice and parsley. Stir to combine.
- In a separate pan over low heat, melt remaining 1 tbsp butter with remaining 1 tbsp cajun seasoning. Add milk, cream cheese, and parmesan. Stir until thick and creamy.
- Divide rice and chicken into 4 servings. Top with creamy sauce.
